       carrageenan is a kind of nature polysaccharides hydrocolloid which is present in the structures of certain varieties of red seaweed. These carbohydrates have the ability to form, at very low concentrations, thick solutions or gels in aqueous media.

 

      Usually, Carrageenan shows off-white to snowy or tan to yellowish, it is free flowing powder, free of odor or taste. The gel is heat-reversible, its can dissolve after heat up and the solution can gel while cooling. Its steady-going, even if it may not reduce gel strength and viscosity for long-term placement. After combining with Konjac, Locust Bean Gum and Xanthan Gum, it is able to increase the gel potential with much better elastic.

 

     Carrageenan is extensively applied in food, medicine, chemically industry, for daily supplies, biological chemistry, building paints, textile printing and agriculture.

Iota Refined

Description

 

Carrageenan is obtained by aqueous extraction of natural strains of seaweeds of Eucheuma spinosum of the class Rhdophyceae(red seaweeds). It is the only one kind of colloid which can remain stable in the process of freeze-thaw. So the frozen Iota carrageenan gel may not happen syneresis when thawing. It has been widely used in all kinds of industries such as food, medicine and daily chemicals and so on.

 

Iota Semi-Refined

Description

 

Treatment of the natural strains of seaweeds of Eucheuma spinosum of the class Rhodophyceae(red seaweeds) remove impurities and fresh water washing and drying to obtain the product. Further purification may be achieved by washing and drying. It is the only one kind of colloid which can remain stable in the process of freeze-thaw. So the frozen Iota carrageenan gel may not happen syneresis when thawing. It has been widely used in all kinds of industries such as food, medicine and daily chemicals and so on.

 

Kappa Refined

Description

 

Carrageenan is obtained by aqueous extraction of natural strains of seaweeds of Gigartinaceae, Solieriaceae, Hypneaceae and Furcellar iaceae, families of the class Rhdophyceae(red seaweeds). No organic precipitant shall be used other than methanol, ethanol and propane-2-ol. Carrageenan consists chiefly of potassium, sodium, magnesium and calcium salts of polysaccharide sulphate esters, which, on hydrolysis, yield galactose and 3,6-anhydrogalaclose. Carrageenan shall not be hydrolyzed otherwise chemically degraded.

Kappa Semi-Refined

Description

The product consists chiefly of the potassium salts of polysaccharide sulphate eaters which on hydrolysis, yield galactose and 3,6-anhydrogalaclose. Sodium, magnesium and calcium salts of polysaccharide sulphate eaters are present in less amount. Up to 15% algal cellulose is also present in the product. The carrageenan in processed eucheuma seaweed shall not be hydrolyzed otherwise chemically degraded.

 

Kappa Series

Description

 

Carrageenan is obtained by aqueous extraction of natural strains of seaweed of Gigartina skottsbergii from Chile. It is refined by scientific extraction process and has been widely used in food, medicine, daily chemical industries and so on.

 

Carrageenan-Meat Products

In food system, the most important difference of properties between carrageenan and other hydrocolloids is its ability to combine or interact with proteins from meat. In milk protein systems, at peripheral locations on the casein micelle there is a concentration of positive charges. This positive electrostatic charge attracts the negatively-charged sulfate groups of the carrageenan molecule to form linkages among the dispersed casein micelles. Carrageenans ability to complex with milk proteins, combined with its water gelling properties enhances carrageenans functionality, e.g. increased gel potential. The strength of carrageenan that shows in process of complex with protein is retaining water and keeps gravy from meat after heating. Meanwhile, it also keeps elasticity in meat product and extends shelf-life.
