Description

Methyl salicylate (oil of wintergreen or wintergreen oil) is an organic ester naturally produced by many species of plants, particularly wintergreens. It is also synthetically produced, used as a fragrance, in foods and beverages, and in liniments.
The compound methyl salicylate was first isolated (from the plant Gaultheria procumbens) in 1843 by the French chemist Auguste André Thomas Cahours (1813–1891), who identified it as an ester of salicylic acid and methanol.

Strong oxidizing acids may cause a vigorous reaction that is sufficiently exothermic to ignite the reaction products. Heat is also generated by the interaction of esters with caustic solutions. Methyl salicylate in a five day BOD test exhibited a value of 55-57% of the theoretical BOD(1,2). Another 5-day BOD determination yielded 65% of the theoretical BOD(3). Methyl salicylate was completely degraded by a microbial mixture when incubated for 7 days at 30°C(4). Significant biodegradation of methyl salicylate in the environment would be expected from this result; however no data concerning biodegradation in natural waters or soil could be located.
